Sally's Recipe Of The Week: Thai Chicken Bowls

Thai Chickenen Bowls

Serves 4

Hereis what you will need:

1/2 cup chicken stock

3 TBS soy sauce

1 TBS fish sauce

1 1/2 TBS light brown sugar

1 1/2 TBS rice vinegar

1 medium onion chopped

3 cloves garlic, chopped

1 jalapeno pepper, seeded and chopped

2 TBS vegetable oil

1 ¼ pounds ground chicken

1 bunch of basil, leaves removed from stem

Hoisin sauce

Oyster sauce

Wisk together the stock, soy sauce, fish sauce, brown sugar and vinegar in a small bowl.

Heat oil in a large pan.

Chop up your onions, jalapeno and garlic.

Add in your onions and jalapenos and season with a little salt and pepper. Sauté them until they start to soften then add in your garlic and stir for a minute until the garlic become fragrant.

Add in the ground chicken. Season it with a bit of salt and pepper. Don’t go to heavy on the salt because there is soy sauce in this recipe. And if you are not using low sodium soy sauce you may want to skip the salt all together.

Break up the chicken while you are cooking.

Chop up your basil.

Taste you dish.Add seasoning as needed.

This is where I decided to add about a TBS of oyster sauce and a TBS of hoisin sauce. You could also add more heat if you wanted.

Add in the basil and just cook it till it wilts.

Serve on top of rice, cauliflower rice, or as in my case quinoa. Let's eat.
