Sally's Recipe Of The Week: Asian Turkey Tenderloin

Asian Turkey Tenderloin
Serves 2 to 3

When you buy turkey tenderloin it usually has two loins in each package. I decided to prepare one and hang on the the second for another day. I'll post that recipe next week.

Here is what you will need:

1 turkey tenderloin
3 TBS brown sugar
3 TBS soy sauce
2 TBS minced fresh ginger root
3 or 4 cloves garlic, grated
1 TBS cornstarch
1 cup reduced sodium chicken broth
1 package of chopped Asian salad kit
pepper
cooking spray
olive oil

Preheat oven to 375 and spray a rimmed baking sheet with an olive oil spray or spread a thin layer of oil on the sheet.
In a small saucepan combine brown sugar, soy sauce,ginger, garlic and a couple grinds of pepper.

Place the turkey breast on the baking sheet and top with half of the brown sugar mixture. Bake uncovered for 25 to 30 minutes.

Warm up the remaining sauce and combine the cornstarch and chicken broth.

Add the chicken broth to the pan and turn up the heat. I decided to add a little heat to mine but you certainly don't have to.

When the turkey is done, place it on an cutting board.....

Cover it with foil and let it rest for 10 minutes.

Taste the sauce and adjust seasoning if necessary. Add about 1 TBS of olive oil.

Let the sauce cool a bit. Place the salad mixture in a large glass bowl. Put the sauce on top....

Toss well to combine.  Slice the turkey.

Divide up the salad into bowls, top with slices of turkey and what ever came in your salad kit. Mine had sliced almonds and Asian croutons. Save the salad dressing that it comes with for another day. Let's Eat!
