Sally's Recipe Of The Week: Shrimp Stir Fry

Shrimp Stir Fry

I love making stir fry and to be honest for me no two are the same! For this recipe I used what I had on hand. You could use other vegetables like bell pepper, cauliflower, etc. Same with the sauce. There are of course the staple of soy sauce but if you don't have honey, use brown sugar. Make it as sweet, salty, spicy as you like.


Here is what you need:

20 to 30 shrimp (depends on size),peeled, cleaned and thawed
one cup sliced carrots
One bunch broccoli cut into florets (I like a lot of broccoli)
1/2 onion sliced
3 TBS soy sauce
1 TBS honey
2 cloves garlic, minced
1 tsp sesame oil

1 tsp sambal oelek or other hot sauce like Sriracha
canola oil

Make the sauce by combining the soy sauce, sambal, honey, garlic and sesame oil in a glass bowl.  Taste and adjust seasoning as needed.  Add the shrimp in and let marinate for a few minutes.

Heat about 1 TBS canola oil in a pan or wok. Add the onions, sprinkle with a little salt and pepper.

Add in the shrimp and sauce, it will only take the shrimp 3 to 4 minutes to cook. You don't want to overcook it, actually they can be a bit under because they will do back in the pan. Remember smaller shrimp cook quicker than large. Remove from pan and set aside.  Add in a little more oil and add in the broccoli and carrots. Season with a little salt and pepper and cook until crisp tender.

Turn down the heat and put the shrimp combo back in the pan.

Cover and let shrimp warm up, not too long just about a minute.

Uncover and give it a taste, adjust seasoning if needed.

Serve on top of rice, or in my case cauliflower rice. Let's eat!
