Sally's Recipe of the Week: Homemade Sofrito

Homemade Sofrito
Makes about 2 cups

So a friend of mine gave me some bell peppers and I decided to try making Sofrito which is kind of salsa like. This is so easy to make and you can divide it into 1/2 cups and freeze for a later use. 

Here is what you will need:


1/2 onion chopped
1 red bell pepper seeded and chopped
1 yellow bell pepper, seeded and chopped. (Can use green pepper)
2 cloves garlic, chopped
1/2 cup cilantro, leaves removed from thick stems
Salt and pepper


Put everything except salt and pepper in mini food processor and pulse to chop up. Don't over due it you don't want it to turn to mush. Taste and season with salt and pepper.


Sofrito is yummy with chips or you can add it to many rice dishes, soups, sauces. Have fun with it. You can add jalapenos for spice, try different types of peppers and spices.
