Chicken Meat Sauce And Zoodles
Makes enough sauce for 4 servings, I used a total of 4 zucchini which made 2 servings so I saved the extra sauce for another time. This sauce is delicious! You can use it on regular pasta if you like. This is one of the best healthy meals I've ever made. Mo loved it. You can also freeze sauce for another day.
Here is what you will need:
4 zucchini
1/2 onion
1 carrot
1 celery stalk
3 cloves garlic
1 1/2 cups crushed tomatoes
1 pound ground chicken (could use turkey if you wanted)
1 tsp fresh chopped oregano (or 1/2 tsp dried flakes)
2 tsp fresh chopped basil, plus more for topping
2 TBS olive oil
crushed red pepper (optional)
salt and pepper
Prep! Chop up your onion, carrot, celery and garlic. Spiralize your zucchini. You can buy zucchini already spiralized or try some of the frozen plant based pasta or just use regular pasta if you like.
Heat 1 TBS oil in a large skillet. Add the onion, carrot and celery. Season with salt and pepper and cook until tender, about 5 minutes.
Add in the garlic and stir for about a minute.
Now add in your chicken and season with salt and pepper. Break up the chicken as it cooks.
Keep breaking up the chicken until it's cooked.
Add in the tomato sauce and basil and oregano.
Taste your sauce and season if needed. After tasting the sauce I decided to add some red pepper flakes. I like to toast them a bit, that is why I cleared a spot in the pan for them. If you are using red pepper flakes, I used about 1 tsp, add them in when you add in your garlic.
If you have a spiralizer you will be left with little rounds of zucchini. Season them with salt and pepper and saute them for a topper.
I just used the same pan that I'm going to cook my zucchini noodles , zoodles, in.
Heat the remaining TBS of oil in a large frying pan. Toss in the zucchini and season with salt and pepper.
Put zoodles on a plate, top with sauce and basil and zucchini rounds if you have them. Fresh grated Parmesan would also be good with this!
