Salmon with Balsamic Cherry Sauce

Serves 2

Here is what you need:

2 6 to 8 ounce salmon filets, skinless

1 cup whole cherries

1 TBS lemon juice and a tsp of zest

1 TBS balsamic vinegar

1 tsp honey or more if needed

1 tsp sesame oil

1 tsp olive oil

Kosher salt and fresh cracked black pepper

Here is what you need to do:

Remove the pits from the cherries. (Watch my Instagram video to see how, 1055online.)

In a sauce pan mix the vinegar, lemon, honey and a pinch of salt. Add in the cherries and coat with the sauce. Heat over medium temperature for at least 10 minutes. I like my cherries pretty soft so I go a little longer.

Make sure you taste the sauce! I added a little extra honey and salt.

Heat both oils in a sauté pan to medium high. Season both sides of salmon with salt and pepper. Fry the salmon for about 3 minutes a side. I like my salmon slightly underdone. It will also depend on how thick the salmon is. 

Plate up the salmon and spoon the sauce over it.  I served it with Jasmine rice.  Let’s Eat!!
