Pork Tenderloin with Fresh Plum Sauce
Serves 4

Here is what you need:

11/2 pound pork tenderloin

1 TBS Montreal steak seasoning (or salt and pepper)

5 plums, cut in to small cubes

3 TBS balsamic vinegar

4 TBS honey

olive oil

pinch of salt (optional)

Here is what you need to do:

For the tenderloin:

Preheat your oven to 400 degrees

Trim the tenderloin of any silver skin and let get to room temperature.

Brush your pork all over  with olive oil. Then season with steak seasoning. Heat an oven safe skillet, I use my cast iron, to medium high and sear the pork for two minutes each side.

Slide the skillet into the oven and cook for 15 to 20 minutes. It will depend on how thick your tenderloin is. I like mine just slightly pink in the center.

Remove pork from skillet and let rest for 10 minutes on a cutting board covered with foil.   Slice and serve with the sauce.

For the plum sauce:

In a sauce pan, put the plums, honey and vinegar and if you want a pinch of salt. Bring to a boil then reduce to a simmer. Stir it often.

When your plum sauce thickens, slide it off the heat, cover and let sit for about 10 minutes
