Baked Cod With A Cheddar And Breadcrumb Crust
Serves 4
If you are not a fish fan, you can make this with boneless, skinless chicken breasts. I did it Saturday night and we loved it. Just make sure you butterfly the breast and increase the cooking time by about 5 minutes. Photo is right below the cod photo.
Here is what you need:
4 fresh cod fillets
1 cup fresh bread crumbs
1 cup grated sharp white cheddar cheese
4 TBS butter, melted
½ to 1 tsp garlic powder
2 TBS mayonnaise
¼ cup chopped fresh parsley
salt and pepper
Nonstick cooking spray
lemon wedges for serving (optional)
Here is what you need to do:
Preheat your oven to 375. Spray a sheet pan with the cooking spray.
In a food processor combine the bread crumbs, cheese, butter and garlic powder. Pulse to combine. Place in a bowl and mix in the parsley.
Using a paper towel pat the cod fillets dry.Season with a little salt and pepper on both sides then spread the mayonnaise across one side of the cod. Press the bread crumb mixture evenly over the top of the fish. Place it on the sheet pan and bake for 20 minutes. The finished fish should be firm and flaky.
Serve with lemon wedges.Let’s Eat!!
