Sally's Recipe Of The Week: Breakfast Quesadillas

Breakfast Quesadillas

Serves 2 but make as many as you like!

The best thing about breakfast quesadillas is you can add whatever you want to them, or just make them with eggs and cheese. If you have some onions or peppers you could sauté and add them and of course cooked crumbled bacon, sausage or ham.

Here is what you need:

4 taco size flour tortillas

2 to 4 eggs – personal preference on how much egg you want

½ cup shredded Mexican cheese ( or what you like)

pat of butter- optional

salt and pepper

I’m going to add some chopped jalapenos and cooked breakfast sausage.

Serve with sour cream, guacamole and salsa.

Here is what you do:

Heat a nonstick pan to medium, the pan should be the same diameter as you tortillas. Add small pat of butter if you like.

Beat the eggs and add a pinch of salt and pepper. Add the eggs to the pan and swirl so they even out across the pan. When the eggs are nearly set, they shouldn’t run when you move the pan add.Sprinkle the cheese and whatever else you like across the top of the egg. Top that with a tortilla.

Using a large spatula get under the egg and flip it. Top the egg with more cheese and any toppings you want and top that with another tortilla. Flip it and let that tortilla brown.

Slide it off the pan and onto a cutting board and slice into quarters.

Serve with your favorite sides. Let’s Eat!
