Sally's Recipe Of The Week: Beef And Pork Lettuce Cups

Beef and Pork Lettuce Wraps

Serves 4

Here is what you need for the filling:

1 pound of a mixture of ground beef and pork

1 and ½ TBS of fresh finely grated ginger

2 large cloves garlic, finely grated

1 red chilie or jalapeno, seeded and thinly sliced

1 TBS brown sugar

1 to 2 tsp fish sauce – or soy if you prefer

dash of toasted sesame oil

zest and juice of 1 lime

3 to 4 scallions, chopped

bib lettuce leaves

olive oil

salt and pepper

Note about the meat, you could use ground chicken or turkey if you want.

You can top with shredded carrots, sriracha, cilantro or bean sprouts.

Here is what you need for the sauce:

juice of ½ lime

1 TBS soy sauce

1 tsp brown sugar

1 tsp toasted sesame oil

1 TBS olive oil

½ red chili, sliced thin

1 to 2 tsp fish sauce (or soy sauce) to taste

a small bunch of fresh cilantro leaves, chopped

 

Here is what you need to do:

Combine all of the sauce ingredients in a bowl. Taste, adjust seasoning as needed and set aside.

Add oil to a pan heated to medium high, when oil shimmers add in the beef and pork and season with salt and pepper. Break apart the meat as it cooks you want small crumbles. When the meat is cooked remove it from the pan and place in a fine strainer. Set aside.

Wipe out the pan heat it back up and add some olive oil and just a dash of sesame oil.

Add in the sliced chili and stir for about a minute. Add in the ginger and garlic, season with a little salt and brown sugar and stir for another minute.

Turn the heat down a bit and add the beef/pork mixture back into the pan along with the fish sauce, lime juice and the zest. Stir to combine. 

The last 30 seconds add in the chopped scallions, remove from heat. Taste it and adjust seasonings as needed.

To serve simply spoon the meat mixture into the lettuce cup, top with some of your sauce and enjoy. Let’s Eat!!
