Pan Fried Cod With Apple Slaw
Serves 4

Here is what you need for the Cod

4 cod fillets (about 6 ounces each)

1/3 cup flour

1/3 cup panko bread crumbs (or bread crumb of your choice)

¼ tsp cayenne pepper

1 egg

½ cup milk

vegetable oil (enough to cover the bottom of your pan about a ½ inch)

Kosher salt

Here is what you need for the Slaw:

½ head light green cabbage, cored and sliced thin

1 apple, julienned

1 carrot, shredded

1 bunch of scallions, thinly sliced

½ cup of mayonnaise

2 TBS apple cider vinegar

1 TBS sugar

1 TBS whole grain mustard

½ tsp of celery seeds (or caraway seeds)

Kosher salt and pepper

Here’s what you need to do to make the slaw:

In a large bowl mix together the mayo, sugar, mustard , vinegar, 1 tsp salt and 1 tsp pepper.Add in the cabbage, apple, scallions and carrot. Toss it around and taste it.Season with more salt if you think necessary.Put in fridge while you make the cod.

Here’s what you need to do to make the fish:

Whisk together the milk and egg in a bowl then add the cod to the bowl. Let it soak in there for a while. You can actually do this before you make the slaw.

In a medium bowl mix together the bread crumbs, flour, cayenne pepper and dash of salt.

Heat about a half inch of oil in a skillet, heat should be medium high. Take the fish out of the milk/egg mixture and place it in the bread crumb mixture making sure it is well coated on both sides.Fry in the skillet until golden brown, about 3 to 4 minutes each side.Place the fish on paper towels to drain. Season with salt and pepper.Serve with the slaw and some mustard on the side.
