Sally's Recipe of the Week: Homemade Turkey Meatballs

Makes about 20-25 (depends on how big you make them)

So you are at home with the kids looking for something to do, how about cook! Kids will have fun making and eating these with their favorite sauce. Just make sure they wash their hands....oh we're already doing that? Seriously after handling the turkey, wash up.

Here is what you will need:

  • 1/2 cup panko bread crumbs
  • 1 small onion, finely chopped
  • 1 large egg
  • 1/4 cup chopped chives
  • 1/4 cup chopped flat-leaf parsley
  • 1/4 cup freshly grated parmesan cheese
  • 2 to 3 minced garlic cloves
  • Salt and pepper
  • 2 pounds ground turkey
  • 2 TBS cup extra-virgin olive oil
  • 2 TBS butter
  • 1/2 plus 1/4 cups chicken broth

In a medium bowl, mix together cup bread crumbs, the onion, egg, parsley,chives, garlic, parmesan and 1/2 teaspoon each salt and pepper then add in the turkey and mix until combined.

Roll the turkey into 1 to 1/2 inch balls.

Melt the oil and butter in a large skillet on medium high. Add in the turkey balls and get them browned all around. About 5 minutes, be careful not to overcook.

Turn the heat down to medium, pour in 1/2 cup of the chicken broth and cover. Cook until the liquid is absorbed. Try one, make sure the seasoning is on point. If they seem dry, add about 1/4 cup more stock and cover and cook a few minutes more.

Serve the meatballs on top of mashed potatoes or wild rice or dip with your favorite sauce. Stay well and LET'S EAT!!
