Sally's Recipe Of The Week: Salmon With Asian Basil Sauce

Salmon With Asian Basil Sauce

Serves 2

Here is what you will need:

1 TBS grated fresh ginger

2 cloves garlic minced

2 TBS brown sugar

1 tsp sriracha, or less depending on your taste or omit

1 tsp soy sauce

1/4 cup water or chicken or vegetable stock

1/4 cup rice or white wine vinegar

2 TBS chopped fresh basil

2 skinless salmon fillets

Kosher salt to taste

1 TBS olive oil

In a medium bowl mix together the ginger, garlic, brown sugar, sriracha, soy sauce,

water or stock and vinegar.

Add in the basil.

Season the salmon on both sides with salt, not too much the sauce will be a little salty.

Heat the oil in a pan on medium high, add the salmon. Cook about 2 to 3 minutes per side, leave the salmon just a little under cooked.

Remove salmon from pan and set aside.

Add the sauce to the pan and stir as it thickens. Place the salmon back in the pan and spoon the sauce over it as it finishes cooking, about a minute or two. Careful not to overcook.

Place salmon on your plate and spoon sauce over it or you can be like me and spoon the sauce over everything. Let's Eat!!
