Sweet and Spicy Meatballs
Serves 3-4
If you need a quick easy dinner this is for you!
Here is what you will need:
1 package frozen meatballs (24-30) count, thawed. Use any type you like, I went with Turkey.
1 cup shredded carrots
1 jalapeno pepper
1/2 cup sweet chili hot sauce
1/4 cup teriyaki sauce
1/2 cup chopped fresh cilantro, plus more for serving
1 TBS canola oil
Chop up your jalapeno, remove stem and seeds first if you don't want it as spicy. Then chop up your cilantro.
Heat the oil in a pan on medium high. Add in the jalapeno and meatballs. Stir them around in the pan to brown the meatballs about 3 minutes.
Add the sauces to the pan and turn down the heat. Mix the sauces into the meatballs.
Cover the pan and let the dish simmer on low to medium heat for about 20 minutes.
During the last 4 minutes of the simmer add in the carrots and cilantro. Leave the lid off if your sauce is a little runny. Taste the sauce and add more chili or teriyaki if needed.
You can serve on top of rice or noodles. I'm using cauliflower rice. Let's Eat!!
