Sally's Recipe Of The Week: Indian Spiced Fish

Indian Spiced Fish

Serves 2

Need a great dish fast. This is it. You can use a variety of fish for this dish. I used orange roughy because I always have it in my freezer. I would prefer to use fresh fish but sometimes you just want to go for the convenience.

Here is what you will need:

2 fish fillets (about 6 ounces each)

1 tsp finely grated ginger

1 large clove garlic minced

1/2 tsp garam masala

1/2 tsp cumin

1/4 tsp ground turmeric

1/4 tsp mustard powder

1/4 tsp cayenne pepper (optional)

1 TBS fresh lime or lemon juice, plus wedges for serving

2 1/2 TBS melted unsalted butter

Kosher salt and fresh ground black pepper

In a bowl combine the garlic, cumin, ginger, garam masala, mustard, cayenne, lemon juice, 1/2 tsp of salt and a couple grinds of pepper. Stir to form a thick paste, if too thick loosen it with a tsp of water.

Line a baking sheet with foil and brush with 1 TBS melted butter. Heat the oven to 350.

Cover both sides of the fish with the spice paste. Place on the baking sheet and drizzle the remaining butter on top. Bake for 18-20 minutes. Baking time will depend on which fish you use.

Serve with you favorite Indian inspired side. Mine is beans and lentils. I also sprinkled with some chop chives and a slice of lime. Let's Eat!!
