Shrimp in Garlic Butter Sauce
Serves 2
Here is what you will need:
16 large shrimp, thawed, peeled and deveined
Pasta- I used 2 packs of veggie pasta
1 lemon
1 stick of butter-unsalted plus 1 TBS
3 to 4 cloves garlic, finely chopped
2 TBS cilantro chopped- I used fresh frozen because that's all I had
1 cup frozen peas
salt,pepper and olive oil
Jently melt the stick of butter with the garlic in the pot.
Place fully thawed shrimp on paper towels to dry.
I added in my cilantro to the butter.
Season the butter sauce with salt and pepper.
Season the shrimp with salt and pepper.
Add the juice of half the lemon, save the other half for serving.
Heat 1 TBS olive oil and the 1 TBS butter in a large saute pan. Cook the shrimp for about 2 minutes on one side then flip and cook the other side for about a minute.
Remove the shrimp from the pan and set aside.
Add just a splash of white wine to the pan you cooked the shrimp in. Turn up the heat and scrape off any bits from the bottom. Let the wine reduce. Turn down the heat.
Cook your paste according to package directions and add the peas to the butter sauce.
Toss the shrimp, noodles and peas in the butter sauce.
Serve with a wedge of lemon. Lets Eat!!
