Sally's Recipe Of The Week: Spiced Roasted Turkey Tenderloin

Spiced Roasted Turkey Tenderloin
Serves 2 to 3

Last week I showed you a turkey tenderloin recipe. Since there are two loins in a package I decided to something different with the second loin.

Here is what you will need:

1 turkey tenderloin
1 TBS light brown sugar
1 tsp salt
1 tsp ground cumin
1/4 tsp cayenne pepper
1/4 tsp ground ginger
1/4 tsp ground coriander
olive oil

Preheat oven to 375.
Line a rimmed baking sheet with foil and brush with a light coat of oil.  In a small bowl, combine the ginger, cumin, cayenne, coriander, sugar and salt.


Brush the turkey with a light coat of oil and rub the sugar/spice mixture evenly over the entire loin.

Bake uncovered for 25 to 30 minutes.

When turkey is done, remove from oven and close up the foil and let it rest for 10 minutes. 

Slice it up.

Serve with your favorite side. Let's eat!
