Sally's Recipe Of The Week: Asian Ground Chicken Salad

Asian Ground Chicken Salad
Serves 4


I used to make dinner salads all the time, I should bring that back! This is such an easy and healthy dinner. You could use ground turkey or pork but I really like ground chicken.

Here is what you will need.

1 pound ground chicken
1/2 seedless cucumber thinly sliced into half moons
1/2 cup chopped onion
10 ounce bag of mixed vegetable slaw
1 TBS grated fresh ginger (I store my peeled ginger in the freezer!)
1 lime
1 TBS fish sauce
1 TBS chili-garlic sauce like Sambal Oelek
1 small bunch of fresh cilantro
1/4 cup chopped roasted-salted peanuts
Kosher salt
1 TBS peanut oil or toasted sesame oil

Zest the lime.  Put the juice of 1/2 lime in a large glass bowl, add in the peanut oil. Cut the other half into small wedges for serving. Add a pinch of salt and taste it. Add what ever it needs. I used sesame oil because that's what I had. I ended up putting some canola oil in the dressing to make it a little milder.

When you like the taste, add the cucumbers into the dressing.

Heat a little canola oil in a pan and add onions and season with a little salt. When the onions start to soften, about 5 minutes on medium temperature, add in the ginger and stir for about a minute. 

Add in the chicken, season with some salt and pepper and break apart.

When chicken is done, add in the fish sauce, Sambal Oelek and lime zest and remove from heat.  Give it a taste and see if it needs more heat, salt, etc.

Chop up your peanuts and cilantro. Hang on to a few cilantro sprigs for garnish.

Add the bag of slaw and cilantro to the cucumbers.

Toss to coat with the dressing.

Divide the salad evenly into 4 bowls. Top with chicken mixture and garnish with chopped peanuts and some cilantro leaves.
