Sally's Recipe of the Week: Broccoli-Salmon Frittata

Broccoli and Salmon Frittata
Serves 2 to 4

Here is something great about a frittata, you can make them with what ever you have on hand the only must have is eggs.  I woke up Sunday morning hungry and looked in the fridge and saw leftover salmon and some steamed broccoli also leftover.  So I decided to use it up in a frittata!  You could easily use potatoes, spinach, smoked salmon, garlic, roasted peppers....pretty much anything you would put in an omelette. Also some people use 4 whole eggs and 4 egg whites. Yes, this does make a fluffier frittata but I never have a use for the yolkes and I hate to waste them so I just use whole eggs. If you do have extra eggs whites throw them in there!

Here is what I used for my latest frittata:   

6 eggs
1 cup steamed broccoli
3 to 4 ounces cooked salmon
2 shallots
1/4 cup freshly grated Parmesan cheese
1/4 cup milk or cream
1 sprig fresh oregano (or you could use thyme)
vegetable oil
salt and pepper


Heat about 2 TBS oil in an oven safe skillet on medium high heat. Chop up the shallots, season with a pinch of salt and pepper  and cook until soft. Keep an eye on them, you want them to soften, not brown. Turn down the heat if necessary.

Preheat the oven to 400.
Whisk together the eggs, milk, cheese and a pinch of salt and a grind of pepper.

Chop up your protein and vegetables. Remember the vegetables/protein  should be cooked.
Also chop up your oregano.

Here is where I made a mistake, before you add the vegetables, protein and oregano into the pan add a little extra oil and mix well.   Then add the broccoli, protein and herbs and season with a little salt and pepper. 

Now pour your egg mixture over everything in the pan and swirl to distribute evenly.

Let set on stove for about 3 to 4 minutes. You will see the eggs pull from the edges of the pan.  Then put in oven on top shelf for 4 to 6 minutes, until eggs are set.

Take a spatula and run it under the frittata to help loosen it. Place a large plate or board over the pan and invert and let the frittata fall out.  Mine was a little sticky because I forgot that second oil step!

Slice into quarters and serve.  I apologize I did not garnish this dish, was a little pressed for time!  I served with some hot sauce.
