Tropical Fruit Salad

Serves 6 - Note, I made this recipe for a party so I doubled the recipe!

Here is what you will need. 

6 cups of fruit. You can use what you would like. I like to use berries because
they are so good for you.  

I used pineapple, strawberries, blackberries, raspberries, blueberries, kiwi and mango.  For the dressing you need 1/3 cup of lime juice, 1 and 1/2 TBS of honey and 1 tsp of grated fresh ginger.

Hull and wash strawberries. Drain well.

Quarter the strawberries and set aside. 

I bought pre-cut and cored pineapple. I just decided to save a step!
Slice the pineapple into long strips.

Then slice the pineapple into little chunks and set aside.
Watch how much pineapple you 
use. It can overpower everything else in the dish.

Slice off the top and bottom of kiwi then slice the skin off the sides.

Slice kiwi in half, lengthwise, then slice into little moons! Set aside.

Mango have a large flat pit right in the center of the fruit, so slice the flesh 
off of each side.

Then score each half of the mango, don't pierce the skin.

Then pop the mango so the little cubes open up and using
a spoon, scrape the cubes off the mango.   Set aside.

Wash blueberries and drain well. 

Check blueberries for stems.  Set aside.

Wash raspberries and drain well. Set aside.  A little note on the raspberries, 
I'm not sure I'd use them again. I love the flavor but they kind of started falling
apart in the salad. Maybe they were too ripe.

Wash blackberries and set aside.

Now lets make the dressing!

Get your ginger, lemons and honey.

Juice limes. To get 1/3 cup of juice you will need about 3.


Peel the ginger by scraping it with a spoon.

You may need a paring knife to peel the little stumps.

Add the honey to the lime juice.

Grate ginger into mini food processor, add the honey and lime 
juice and blend until ginger is minced. If you don't have a food processor
just wisk everything together.  


Gently mix the fruit then pour dressing over fruit just before serving.
