Strawberries in Prosecco with Vanilla Ice Cream

.                 2 1/2 pounds strawberries, sliced
.                 1/4 cup sugar
.                 One 750-milliliter bottle chilled Prosecco
.                 2 pints vanilla ice cream


.                 In a bowl, toss the strawberries with the sugar and let stand until the sugar is dissolved, about 30 minutes. Spoon the berries and any syrup into glasses and top with the Prosecco and a scoop of ice cream. Serve right away.


Sally’s Notes:

It’s important to let the berries rest in the sugar out of the refrigerator for a least 30 minutes.  They taste so much better when at  room temperature. Also let the ice cream soften a bit.  If you want this to be kid friendly, skip the Prosecco and maybe use a soft drink like Sprit.
