Shrimp and Soba Noodles

Serves 4 people, or 2 really hungry people!


Here is what you will need:

12 ounces soba noodles

3 to 4 TBS vegetable oil/ divided

6 tablespoons low-sodium soy sauce

1 teaspoon agave syrup

1 large red onion, thinly sliced

6 garlic cloves, grated or chopped

1 teaspoon finely grated lime zest, plus 2 tablespoons fresh lime juice

1 pound large shrimp, shelled and deveined


1/4 cup chopped cilantro

¼ to ½  teaspoon crushed red pepper (optional)

Lime wedges, for serving

While your water is heating up to cook your noodles, use that time to slice your onions, grate your garlic and chop up your cilantro.



Bring a large pot of water to a boil. Add the noodles and cook, stirring, until tender, about 4 minutes.

Drain and rinse under cold water.  Set aside and let drain.

Add the lime zest to noodles.

In a large skillet, heat 1 TBS of oil, then add the onions. Cooking over moderate heat until soft. 

While the onions are cooking, make the sauce. In a medium bowl, combine 2 tablespoons of the oil with the soy sauce, and agave syrup. If using red pepper add it here.

Add the garlic to the skillet and cook about a minute.

Add more oil if necessary.

Add shrimp to the pan and cook a couple of minutes on each side.


They should look like this!  Add the sauce too the pan and mix well.


 Put shrimp mixture in bowl, add noodles, lime juice and 
cilantro. Toss well and serve>.
