Here is what you will need for 2 servings:
16 sea scallops (or more if you're hungry!)
1 tablespoons butter
1/2 cup white wine
1 tablespoons fresh lemon juice
2 tablespoons fresh chives (chopped)
1 clove garlic (minced) or garlic powder
salt and pepper to taste
Angel hair pasta or rice (cooked according to package directions)
Rinse scallops in cold water, drain.
Dry scallops on paper towels.
Add butter to large skillet and melt over low heat.
Add onion and let soften.
Add Scallops& cook over medium high heat about 2 to 3 minutes a side.
Remove scallops using a slotted spoon and set aside.
Add wine, lemon juice, garlic and chives to skillet.
Cook over medium heat 2 minutes, stirring occasionally. Add butter, remove from heat stirring constantly and taste. Season with salt and pepper.
To serve, place scallops over rice or pasta, spoon sauce over the top. If you have parsley (I did not) garnish with it.
