Sally's Notes:  I used two chicken breast halves and sliced them open, like a book to make the breasts thinner and even in thickness.  I also did not serve it with the Blue Cheese Slaw that the Neely's recommend, although it sounds yummy! I just served it with a simple wedge salad with some Blue Cheese Dressing.
